Recipe: Chewy Chococonut Cookies

Everyone loves a good chocolate chip cookie, but sometimes you want to mix it up a bit. If you've had enough plain chocolate chip cookies this holiday season, check these out!


These chewy Chococonut cookies might be a bit of a tongue twister, but the flavors of the dark chocolate chunks and the chewy shredded coconut compliment each other brilliantly and make these a great change from the typical chocolate chip cookie!

They're big, soft, chewy cookies, like the kind you get from the cookie bakeries or carts at the mall. Without further ado, here's the quick and easy recipe! No dough chilling required.

Chewy Chococonut Cookies
Makes 18 large cookies


* 0.5 c. butter, softened
* 0.5 c. white sugar
* 0.25 c. brown sugar
* 1 egg
* 1 tsp. vanilla extract

* 1 c. all-purpose flour
* 0.5 tsp. baking soda
*0.5 tsp. salt

* 1 c. semi-sweet chocolate chunks
* 1 c. flaked coconut

1) Preheat the oven to 375F (190C).

2) Cream the butter and sugars together in a large bowl with an electric hand mixer.

3) Cream in the egg and vanilla.

4) In a separate medium-sized bowl, mix the flour, baking soda, and salt.

5) Slowly add the flour mixture to the egg mixture, mixing gently (but well) with a heavy wooden spoon. Don't over-mix.

6) Gently fold in the chocolate chunks and flaked coconut. Again, don't over-mix!

7) Drop by rounded tablespoons on a greased cookie sheet (or a lined cookie sheet for easier clean-up). 

8) Bake for 12-15 minutes in the preheated oven. Don't over-bake! 


They'll set further during the five minutes that you let them cool on the baking sheet, before transferring to a wire rack to cool fully.
